I think this paper model of the Transformer Bumble-Bee is rather spectacular. The artist has also been good enough to document the entire process.
And while we're at it, here's a Halo papercraft model by Mike McDermott with full instructions.

Hans Op De Beeck

Belgian installation artist Hans Op De Beeck has produced some incredible 3D works, including his Silent Interior series pictured here.
Consisting of six bas-reliefs made from cardboard and wood, each interior references a specific period from the last fifty years. Party decorations strewn around the rooms seem to indicate celebrations that have come and gone. Fantastic stuff.

Paper Pop-up Puppetry Music Video
A Fantastically creative use of basic pop-up mechanisms from brilliant and quirky bloke living in the UK, Price James. The wonderfully animated effect he gets from simple application of photography and moveable tabs, etc. is tremendous fun. He really understands pop-ups and plays with the concept in a way that pleases me and I suspect you too.
(found on brilliant paper artist, Mary Robinette Kowal's blog by my friend,Sven Bonnichsen.)

Paper Critters - Make your own!

One of the paper forest readers mentioned this site in a comment, and it is certainly worthy of a post. Papercritters.com allows you to play around and create your own designs on a simple paper sculpture template. You can spend the afternoon creating your own personal paper army.

Paper Toys by Chiba

I'm really digging the urban inspired paper toy work of Jonny Chiba. The Headnoodaz (above) is the first one I built. I also love the little dude with the boombox head! You can download these and several others from his blog here.
Good Stuff!
